Course Description

​This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills . They are involved in mainly routine and repetitive tasks and work under direct supervision .

This qualification does not reflect the skills required by commercial cooks.

Packaging Rules

To achieve a Certificate II in Hospitality (Kitchen Operations), 13 units must be completed:

  • 8 core units
  • 5 elective units​

  • Work effectively with others (BSBWOR203B)
  • Use hygienic practises for food saftey (SITXFSA001)
  • Use food preparation equipment (SITHCCC001)
  • Prepare dishes using basic methods of cookery (SITHCCC005)
  • Use cookery skills effectively (SITHCCC011)
  • Clean kitchen premises and equipment (SITHKOP001)
  • Maintain the quality of perishable items (SITXINV002)
  • Participate in safe work practices (SITXWHS001)

Elective Units

  • Prepare and present sandwiches (SITHCCC003)
  • Prepare appetisers and salads (SITHCCC006)
  • Prepare vegetables, fruit, egg and farinaceous dishes (SITHCCC008)
  • Interact with customers (SITXCCS003)
  • Participate in safe food handling practices (SITXFSA002)
