Course Description

​This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills . They are involved in mainly routine and repetitive tasks and work under direct supervision .

This qualification does not reflect the skills required by commercial cooks.

Packaging Rules

To achieve a Certificate II in Hospitality (Kitchen Operations), 13 units must be completed:

  • 8 core units
  • 5 elective units​


Core Units

  • Work effectively with others (BSBWOR203B)
  • Use hygienic practises for food saftey (SITXFSA101)
  • Use food prepartion equipment (SITHCCC101)
  • Produce dishes using basic methods of cookery (SITHCCC201)
  • Use cookery skills effectively (SITHCCC207)
  • Clean kitchen premises and equipment (SITHKOP101)
  • Maintain the quality of perishable items (SITXINV202)
  • Participate in safe work practices (SITXWHS101)

Elective Units

  • Prepare sandwiches (SITHCCC103)
  • Produce appetisers and salads (SITHCCC202)
  • Produce vegetables, fruit, egg and farinaceous dishes (SITHCCC204)
  • Particpate in safe food handling procedures (SITXFSA201)
  • Interact with customers (SITXCCS202)

Duration

  • ​Class based and Mixed Mode delivery average 4 months
  • Traineeships 6 – 12 months
